Adhering to traditional methods, we’ve chosen to use direct fire, copper pot stills for our distillation process. Our labor intensive production requires we distill twice to allow our rudimentary stills to reach a high enough alcohol concentration to go to barrel. In return, we are left with a beautifully viscous and high ester-driven spirit.
At Sonoma County Distilling Company, we keep a watchful eye for burns as our direct-fire stills produce a consistent and slight caramelization.
